Vegan Quesadilla

INGREDIENTS

  • 1/2 cup Refried Beans with 1/4 cup minced onion
  • Some sort of base filling
  • Additional filings
    • 1/2 cup dry or 1 cup softened black beans
    • 1 cup corn kernels
    • Green onions
  • 2 tablespoons taco seasoning packet (if using TVP crumbles)
  • Greens
    • Leaf lettuce
    • Arugula
    • Spinach
  • Some sort of saucy condiment
  • Tortilla Shells (we like Ole Xtreme Wellness High Fiber Tortilla Wraps) 



DIRECTIONS

Before preparing this meal:

 

  1. Coat a thin layer of refried beans on each tortilla shell.
  2. Layer the base filing (TVP Crumbles, LightLife vegan chickun strips) onto one of the tortilla shells.
  3. Layer on the additional fillings (black beans, corn, green onion).
  4. Cook until golden brown.
  5. Serve with greens and a condiment.
