Vegan Quesadilla

INGREDIENTS
- 1/2 cup Refried Beans with 1/4 cup minced onion
- Some sort of base filling
- TVP Crumbles
- LightLife vegan chickun strips, diced
- Additional filings
- 1/2 cup dry or 1 cup softened black beans
- 1 cup corn kernels
- Green onions
- 2 tablespoons taco seasoning packet (if using TVP crumbles)
- Greens
- Leaf lettuce
- Arugula
- Spinach
- Some sort of saucy condiment
- Tortilla Shells (we like Ole Xtreme Wellness High Fiber Tortilla Wraps)
DIRECTIONS
Before preparing this meal:
- If using dry beans, soften the beans.
- If using homemade Refried Beans, prepare the refried beans.
- If using TVP Crumbles, prepare the TVP Crumbles with taco seasoning.
- Coat a thin layer of refried beans on each tortilla shell.
- Layer the base filing (TVP Crumbles, LightLife vegan chickun strips) onto one of the tortilla shells.
- Layer on the additional fillings (black beans, corn, green onion).
- Cook until golden brown.
- Serve with greens and a condiment.
