Mexican Fajitas

INGREDIENTS
- Veggies, such as:
- onion
- bell pepper
- mushrooms
- zucchini
- red potato, quartered
- tomato, large chunks
- Minced garlic
- 1 block (16 oz.) extra firm tofu, cubed
- Fajitas seasoning (make sure it's vegan!)
- Corn Tortilla Shells
- Some sort of condiment
- taco sauce
- guacamole
- homemade vegan sour cream
- chipotle sauce
DIRECTIONS
- Marinade the tofu in the taco sauce.
- Fry veggies and garlic and fajita seasoning until soft.
- Mix in the tofu.
- Warm up the corn tortillas and wrap in some sort of towel to keep them warm.
- Serve with:
- tostadas or tortillas
- Mexican rice
- Refried beans
- Shredded iceberg lettuce
- Condiment
