Mexican Fajitas

INGREDIENTS

  • Veggies, such as:
    • onion
    • bell pepper
    • mushrooms
    • zucchini
    • red potato, quartered
    • tomato, large chunks
  • Minced garlic
  • 1 block (16 oz.) extra firm tofu, cubed
  • Fajitas seasoning (make sure it's vegan!)
  • Corn Tortilla Shells
  • Some sort of condiment


DIRECTIONS

  1. Marinade the tofu in the taco sauce.
  2. Fry veggies and garlic and fajita seasoning until soft.
  3. Mix in the tofu.
  4. Warm up the corn tortillas and wrap in some sort of towel to keep them warm.
  5. Serve with:
    • tostadas or tortillas
    • Mexican rice
    • Refried beans
    • Shredded iceberg lettuce
    • Condiment
