Vegan Swedish Balls

INGREDIENTS
For the Swedish Balls
- 1 small yellow onion, finely diced
- 1/2 cup panko bread crumbs
- 1/2 cup of your favorite plant based milk (e.g. almond milk, soy milk, rice milk) but avoid coconut milk
- 1 tablespoon ground flaxseed
- 1/2 teaspoon ground white pepper
- pinch all spice
- 12 oz vegan crumbles
For the Gravy
- 2 tablespoon all-purpose flour
- 1 1/2 cups vegetable stock
- 1 tablespoon soy sauce
- 1 teaspoon Dijon mustard
- 1/4 cup unsweetened oat milk
- Salt and pepper to taste
DIRECTIONS
For the Swedish Balls
- Preheat oven to 400 degrees.
- Heat up 1 teaspoon of oil in a large skillet and sauté your onion with a pinch of salt until softened then allow to cool.
- Meanwhile, combine the ground flax seed with 2 tablespoons of water and let sit for 5 minutes (it should thicken into a bit of a paste)
- Mix together your breadcrumbs, milk, flax mixture, ground black pepper and allspice in a bowl.
- Mix in the vegan crumbes, onions, and breadcrumbs.
- Form into balls.
- Bake in the oven for about 40 minutes, until crispy.
For the Gravy
- In a frying pan, combine 1 tablespoon oil and all purpose flour and heat for about 1 minute.
- Slowly mix in the broth, breaking up the clumbs of flour.
- Continue to whisk, mixing in the soy sauce and mustard to thicken the gravy.
- Mix in the milk, salt and pepper.
