TVP Stroganoff

INGREDIENTS
For the creamy Stroganoff base
- 1/2 block silken tofu
- 1 tablespoon apple cider vinegar
- 1 lemon
- 1 tablespoon Better than Boullion vegan beef base
- 1 tablespoon nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons paprika
- 2 teaspoons thyme
- ground black pepper, to taste
For the TVP and veggies
- TVP crumbles
- 1 bell pepper, sliced into spears
- 1 onion, sliced into spears
- 1 pound mushrooms, sliced
- 1 teaspoon minced garlic
DIRECTIONS
- Get the TVP crumbles going, as this can take up to an hour.
- Meanwhile, combine the creamy Stroganoff base ingredients, blend until smooth, and refrigerate.
- Fry bell pepper, onion, and minced garlic for 5 to 10 minutes.
- Add sliced mushrooms.
- Mix in the creamy Stroganoff base.
- Mix in the TVP crumbles.
