TVP Stroganoff

INGREDIENTS

For the creamy Stroganoff base

  • 1/2 block silken tofu
  • 1 tablespoon apple cider vinegar
  • 1 lemon
  • 1 tablespoon Better than Boullion vegan beef base
  • 1 tablespoon nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons paprika
  • 2 teaspoons thyme
  • ground black pepper, to taste

For the TVP and veggies

  • TVP crumbles
  • 1 bell pepper, sliced into spears
  • 1 onion, sliced into spears
  • 1 pound mushrooms, sliced
  • 1 teaspoon minced garlic


DIRECTIONS

  1. Get the TVP crumbles going, as this can take up to an hour.
  2. Meanwhile, combine the creamy Stroganoff base ingredients, blend until smooth, and refrigerate.
  3. Fry bell pepper, onion, and minced garlic for 5 to 10 minutes.
  4. Add sliced mushrooms.
  5. Mix in the creamy Stroganoff base.
  6. Mix in the TVP crumbles.
