Garden Spaghetti

INGREDIENTS

  • 112 grams spaghetti noodles for 2 servings (we like Chickapea Spaghetti Noodles)
  • 2 cups homemade creole saucehomemade marinara sauce or spaghetti sauce (we like Muir Glens)
  • Whatever garden veggies you have:
    • artichoke hearts
    • bell pepper
    • mushrooms
    • onions
    • tomatoes
  • Spices, to taste:
    • garlic
    • onion powder
  • Garnish with:
    • A few cherry tomatoes
    • A few green onions
    • Sliced lemons


DIRECTIONS

  1. Cook the spaghetti noodles in boiling water until soft.
  2. Meanwhile, fry the veggies and garlic until golden brown.
  3. Mix in the spaghetti sauce and spices.
  4. Layer noodles, and then the mixture. 
  5. Garnish with green onion and cherry tomatoes.
  6. Serve with sliced lemon.
