Cornbread Apple Stuffing

INGREDIENTS
- cornbread bites
- 1 large onion
- 2 celery stalks
- 2 medium apples
- 8 bella mushrooms
- 2 red bell peppers
- 2 cups cherry tomatoes
- olive oil
- Spices
- ground black pepper
- sage
- smoked paprika
DIRECTIONS
For the cornbread
- Preheat oven to 375 degrees.
- Mix together the plant based milk, applesauce, maple syrup, vinegar and ground flax. Let's sit for 5 minutes.
- Meanwhile, combine the flour, cornmeal, baking powder, baking soda, and salt.
- Combine the wet and dry ingredients.
- Line an 8 x 8 baking pan with parchment paper.
- Bake for 30 minutes.
- Remove from oven, let cool for 30 minutes and then dice into 1 inch cubes.
- Bake for another 10 minutes to crispen them up a bit.
For the filling
- Roast bell pepper and cherry tomatoes in oven until properly roasted.
- Meanwhile fry onion and celery.
- Mix in apple and mushrooms.
- Add spices.
Putting it all together
- Combine cornbread chunks and fried veggies.
- Bake for 15 minutes.
- Garnish with roasted bell pepper and cherry tomatoes.
