Cornbread Apple Stuffing

INGREDIENTS

  • cornbread bites
  • 1 large onion
  • 2 celery stalks
  • 2 medium apples
  • 8 bella mushrooms 
  • 2 red bell peppers
  • 2 cups cherry tomatoes 
  • olive oil
  • Spices
    • ground black pepper 
    • sage
    • smoked paprika 


DIRECTIONS

For the cornbread

  1. Preheat oven to 375 degrees.
  2. Mix together the plant based milk, applesauce, maple syrup, vinegar and ground flax. Let's sit for 5 minutes. 
  3. Meanwhile, combine the flour, cornmeal, baking powder, baking soda, and salt.
  4. Combine the wet and dry ingredients. 
  5. Line an 8 x 8 baking pan with parchment paper.
  6. Bake for 30 minutes.
  7. Remove from oven, let cool for 30 minutes and then dice into 1 inch cubes.
  8. Bake for another 10 minutes to crispen them up a bit.

For the filling

  1. Roast bell pepper and cherry tomatoes in oven until properly roasted.
  2. Meanwhile fry onion and celery.
  3. Mix in apple and mushrooms. 
  4. Add spices.

Putting it all together 

  1. Combine cornbread chunks and fried veggies. 
  2. Bake for 15 minutes. 
  3. Garnish with roasted bell pepper and cherry tomatoes.
