Cornbread Bites

INGREDIENTS
- 1 cup plant based milk
- 1/2 cup apple sauce
- 1 tablespoon ground flax
- 1 tablespoon maple syrup
- 1 tablespoon apple cider vinegar
- 1 cup whole wheat pastry flour
- 1 cup yellow cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch of salt
DIRECTIONS
- Preheat oven to 375 degrees.
- Mix together the plant based milk, applesauce, maple syrup, vinegar and ground flax. Let's sit for 5 minutes.
- Meanwhile, combine the flour, cornmeal, baking powder, baking soda, and salt.
- Combine the wet and dry ingredients.
- Line an 8 x 8 baking pan with parchment paper.
- Bake for 30 minutes.
- Remove from oven, let cool for 30 minutes and then dice into 1 inch cubes.
- Bake for another 10 minutes to crispen them up a bit.
