Lentil Tacos

INGREDIENTS
- Taco Shells, hard or soft
- 1/2 cup dry lentil beans (to make 6 tacos)
- Onion
- Garlic
- Salsa
- Taco Seasoning
- Greens
- Leaf lettuce
- Arugula
- Spinach
- Some sort of saucy condiment
DIRECTIONS
- Soak the lentils in hot water for at least a few hours. If you forget to do this, you can boil the lentils for about 15 to 20 minutes.
- Thoroughly drain the lentils. We don't want them to be all mushy and nasty.
- Fry onions and garlic until golden brown.
- Mix in the lentils.
- Mix in taco seasoning and 2 - 4 tablespoons of salsa.
- Then simply arrange tacos like you normally would.
