Vegan Belgian Waffle

INGREDIENTS
- 1/4 cup room temperature plant based milk (e.g. almond milk, soy milk, rice milk) but avoid coconut milk
- 1/2 teaspoon apple cider vinegar
- 1/2 teaspoon pure vanilla extract
- 1 tablespoon natural maple syrup
- 1/8 cup melted vegan butter
- 1/3 cup all purpose white flour
- 1 teaspoon baking powder (make sure it has not expired)
- 1/2 teaspoon ground cinnamon
DIRECTIONS
- Combine the wet ingredients. This is your vegan buttermilk.
- Whisk together the dry ingredients.
- Mix together the wet and dry ingridents into a somewhat chunky consistency. You do not want it to be overly runny. Let this stand for at least 5 minutes to give the baking powder time to activate.
- Spray waffle iron with nonstick spray and cook until golden brown, which is about 2 or 3 minutes.
