Raisin chocolate chip mini pancakes

INGREDIENTS

  • 1/4 cup all purpose flour
  • 1 teaspoon baking powder
  • dash ground cinnamon
  • dash chia seeds
  • 1/4 cup of your favorite plant based milk (e.g. almond milk, soy milk, rice milk) but avoid coconut milk
  • dash vanilla extract
  • 10 vegan chocolate chips
  • 10 raisins


DIRECTIONS

  1. In a bowl, combine dry ingredients except for the raisins and vegan chocolate chips.
  2. In another bowl, combine almond milk and vanilla extract.
  3. Combine dry and wet ingredients, and let sit 5 minutes.
  4. Mix in the raisins and vegan chocolate chips
  5. Spray frying pan with nonstick spray and fry over medium low heat.
