Raisin chocolate chip mini pancakes

INGREDIENTS
- 1/4 cup all purpose flour
- 1 teaspoon baking powder
- dash ground cinnamon
- dash chia seeds
- 1/4 cup of your favorite plant based milk (e.g. almond milk, soy milk, rice milk) but avoid coconut milk
- dash vanilla extract
- 10 vegan chocolate chips
- 10 raisins
DIRECTIONS
- In a bowl, combine dry ingredients except for the raisins and vegan chocolate chips.
- In another bowl, combine almond milk and vanilla extract.
- Combine dry and wet ingredients, and let sit 5 minutes.
- Mix in the raisins and vegan chocolate chips
- Spray frying pan with nonstick spray and fry over medium low heat.
