Pita Pocket

INGREDIENTS

  • Pita pockets (whole wheat if possible)
  • 1/2 cup dried or 1 cup soaked lima beans
  • 1 very small red onion, sliced
  • a few dill pickles, finely diced
  • a few green olives, sliced
  • 1 cup sauerkraut 
  • 1/4 cup hummus (2 tablespoons for each pita pocket)
  • 1 cup mixed greens (e.g. arugula, romaine lettuce, spinach, et cetera)
  • 1/2 teaspoon "everything but the bagel" seasoning
  • Ground black pepper, to taste


DIRECTIONS

  1. If using raw lima beans, soften the beans.
  2. Mix all of the ingredients and pack each pita pocket. Easy enough, eh?
