Pita Pocket

INGREDIENTS
- Pita pockets (whole wheat if possible)
- 1/2 cup dried or 1 cup soaked lima beans
- 1 very small red onion, sliced
- a few dill pickles, finely diced
- a few green olives, sliced
- 1 cup sauerkraut
- 1/4 cup hummus (2 tablespoons for each pita pocket)
- 1 cup mixed greens (e.g. arugula, romaine lettuce, spinach, et cetera)
- 1/2 teaspoon "everything but the bagel" seasoning
- Ground black pepper, to taste
DIRECTIONS
- If using raw lima beans, soften the beans.
- Mix all of the ingredients and pack each pita pocket. Easy enough, eh?
