Teriyaki Sweet Potatoes and Veggies

INGREDIENTS
- 1 sweet potato, peeled and diced
- 1 large onion, diced
- 1 bell pepper, diced
- 1 leek, diced
- 2/3 cups couscous
- Homemade teriyaki sauce
DIRECTIONS
- Fry the sweet potatoes veggies over medium heat.
- Meanwhile, prepare the homemade teriyaki sauce
- By now, the veggies should be done. Mix the teriyaki sauce into the veggies, and if it's not quite thick enough, add another teaspoon of cornstarch.
- Serve over couscous.
