Roasted Cauliflower Tacos

INGREDIENTS
For the roasted cauliflower
- 1 large head of cauliflower, cut into florets
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cumin
- ground black pepper, to taste
For the slaw
- 2 cups of shredded cabbage
- 2 tablespoons fresh cilantro
- 1/4 cup thinly sliced red onion
- Juice from a fresh lime
DIRECTIONS
- Prepare the Cashew Jalapeno Sauce.
- Preheat oven to 425 degrees.
- Toss cauliflower florets with spices and bake for 18 minutes.
- Meanwhile, combine the slaw ingredients.
- Warm tortillas fill with crispy cauliflower, slaw, and the Cashew Jalapeno Sauce.
