Roasted Cauliflower Tacos

INGREDIENTS

For the roasted cauliflower

  • 1 large head of cauliflower, cut into florets
  • 1 teaspoon chili powder 
  • 1/2 teaspoon garlic powder 
  • 1/2 teaspoon onion powder 
  • 1/4 teaspoon cumin 
  • ground black pepper, to taste

 

For the slaw

  • 2 cups of shredded cabbage 
  • 2 tablespoons fresh cilantro
  • 1/4 cup thinly sliced red onion 
  • Juice from a fresh lime

Cashew Jalapeno Sauce



DIRECTIONS

  1. Prepare the Cashew Jalapeno Sauce.
  2. Preheat oven to 425 degrees.
  3. Toss cauliflower florets with spices and bake for 18 minutes.
  4. Meanwhile, combine the slaw ingredients.
  5. Warm tortillas fill with crispy cauliflower, slaw, and the Cashew Jalapeno Sauce.
