Pasta Bake

INGREDIENTS
- 2 cups penne or rotini noodles
- A slew of veggies, such as
- onions
- bell pepper
- mushrooms
- zucchini
- sun dried tomatoes
- artichoke hearts
- 2 cups spaghetti sauce
- 2 tablespoons nutritional yeast flakes
- 2 tablespoons panko whole wheat bread crumbs
DIRECTIONS
- Cook the noodles in a pot of boiling water until soft.
- Meanwhile, chop and dice the veggies.
- Preheat oven to 400 degrees.
- Spray baking dish with nonstick spray.
- Combine the noodles and veggies in the baking pan.
- Mix in the spaghetti sauce.
- Bake for 30 minutes.
- Mix up the goodies, sprinkle on the nutritional yeast flakes and panko bread crumbs and bake for another 20 minutes.
- Broil for a few minutes, to get the top layer nice and crispy.
