Brazilian Stir Fry

INGREDIENTS
- 1 medium sweet potato, diced into small cubes
- 1 leek, chopped
- 1 red bell pepper, cut into spears
- 1 medium yellow zucchini, diced
- 1 large tomato, cut into farily large chunks
- 1/2 cup dry or 1 cup softened black beans, drained
- 1 teaspoon minced garlic
- Small ginger root, peeled and finely diced
- 1 teaspoon cumin seeds
- 1/2 teaspoon ground cumin
- 1 teaspoon ground thyme
- ground black pepper, to taste
- 2 limes
- 1 tablespoon low sodium soy sauce
- 1 teaspoon sesame seeds
- Some sort of fresh herb (cilantro, parsely, et cetera)
DIRECTIONS
Before preparing this meal, if using dry beans, soften the beans.
- Cook sweet potato over medium heat for 5 minutes, just to soften up the sweet potato a bit.
- Fry the sweet potato, veggies, beans, minced garlic, and cumin seeds for about 5 minutes.
- Mix in the spices except for the lime. If you add the lime now, the lime flavor gets totally lost and buried by the other flavors.
- Garnish with sesame seeds and lime.
