Brazilian Stir Fry

INGREDIENTS

  • 1 medium sweet potato, diced into small cubes
  • 1 leek, chopped
  • 1 red bell pepper, cut into spears
  • 1 medium yellow zucchini, diced
  • 1 large tomato, cut into farily large chunks
  • 1/2 cup dry or 1 cup softened black beans, drained
  • 1 teaspoon minced garlic
  • Small ginger root, peeled and finely diced
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon ground cumin
  • 1 teaspoon ground thyme
  • ground black pepper, to taste
  • 2 limes
  • 1 tablespoon low sodium soy sauce 
  • 1 teaspoon sesame seeds
  • Some sort of fresh herb (cilantro, parsely, et cetera)


DIRECTIONS

Before preparing this meal, if using dry beans, soften the beans.

  1. Cook sweet potato over medium heat for 5 minutes, just to soften up the sweet potato a bit.
  2. Fry the sweet potato, veggies, beans, minced garlic, and cumin seeds for about 5 minutes.
  3. Mix in the spices except for the lime. If you add the lime now, the lime flavor gets totally lost and buried by the other flavors.
  4. Garnish with sesame seeds and lime.
