Millet Loaf

INGREDIENTS
- 1 cup millet
- 1 onion, finely diced
- a few stalks of celery, finely diced
- 1 large carrot, shredded
- 1/3 cup low sodium soy sauce
- 1 tablespoon minced garlic
- 1 tablespoon thyme
- 1 tablespoon onion powder
- Garnish with:
- green onion
- cherry tomatoes
- pecans
DIRECTIONS
- Bring 2 cups water and soy sauce to a rolling boil in a sauce pan.
- Mix in all of the remaining ingredients and simmer for about 30 minutes. The millet should absorb most of the liquid.
- Cover, and let sit for an hour or longer. The longer it sits, the more it will thicken.
- Garnish with green onion, cherry tomatoes and pecans.
