Millet Loaf

INGREDIENTS

  • 1 cup millet
  • 1 onion, finely diced
  • a few stalks of celery, finely diced
  • 1 large carrot, shredded
  • 1/3 cup low sodium soy sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon thyme
  • 1 tablespoon onion powder
  • Garnish with:
    • green onion
    • cherry tomatoes
    • pecans


DIRECTIONS

  1. Bring 2 cups water and soy sauce to a rolling boil in a sauce pan.
  2. Mix in all of the remaining ingredients and simmer for about 30 minutes. The millet should absorb most of the liquid.
  3. Cover, and let sit for an hour or longer. The longer it sits, the more it will thicken.
  4. Garnish with green onion, cherry tomatoes and pecans.
