Gnocchi Pasta

INGREDIENTS
- 1 small onion, finely diced
- 1 small bell pepper, finely diced
- 1 cup diced tomato, chopped
- 1 teaspoon minced garlic
- Whole wheat gnocchi
- 3/4 cup (56 grams) whole wheat penne pasta noodles
- 1 1/2 cup spaghetti sauce (we like Muir Glen)
DIRECTIONS
- Fry onion, bell pepper and garlic until golden brown.
- Mix in the tomatoes.
- Meanwhile, boil noodles until soft, about 7 minutes. Remove from hot water and run under cool water so they remain firm and dont get all mushy and nasty.
- Also meanwhile, cook gnocchi in hot water until they float. Remove and drain.
- Add spaghetti sauce to the frying pan.
- Mix in gnocchi.
- Mix in noodles.
