Black Bean Burger

INGREDIENTS

  • 1 very small onion, finely diced
  • 1/4 bell pepper, diced
  • 1 teaspoon minced garlic
  • 1 cup dry or 2 cups softened black beans
  • 1/2 cup corn kernels
  • 1/4 cup Panko breadcrumbs
  • a few tablespoons whole wheat flour 
  • Spices
    • Chili powder 
    • Onion powder 
    • Paprika 
    • Ground black pepper
    • Herbs (basil, oregano, parsley, rosemary, thyme, et cetera)


DIRECTIONS

  1. Fry the onion, pepper and minced garlic until golden brown. 
  2. Mix in the corn.
  3. In a mixing bowl, combine the frying pan mixture, potatoes, black beans, breadcrumbs and spices and mash with your hands until smooth. Add additional breadcrumbs as needed to get the right consistency.
  4. Form into patties.
  5. Coat with whole wheat flour. 
  6. Fry in a frying pan or on the grill.
