Black Bean Burger

INGREDIENTS
- 1 very small onion, finely diced
- 1/4 bell pepper, diced
- 1 teaspoon minced garlic
- 1 cup dry or 2 cups softened black beans
- 1/2 cup corn kernels
- 1/4 cup Panko breadcrumbs
- a few tablespoons whole wheat flour
- Spices
- Chili powder
- Onion powder
- Paprika
- Ground black pepper
- Herbs (basil, oregano, parsley, rosemary, thyme, et cetera)
DIRECTIONS
- Fry the onion, pepper and minced garlic until golden brown.
- Mix in the corn.
- In a mixing bowl, combine the frying pan mixture, potatoes, black beans, breadcrumbs and spices and mash with your hands until smooth. Add additional breadcrumbs as needed to get the right consistency.
- Form into patties.
- Coat with whole wheat flour.
- Fry in a frying pan or on the grill.
