Creamy Pumpkin Spaghetti

INGREDIENTS
Pumpkin Sauce
- 1 yellow onion, diced
- 2 tablespoons minced garlic
- 5 sage leaves, finely diced
- 2 sprigs rosemary, finely chopped
- 1 tablespoon thyme
- 1/4 cup lite coconut milk
- salt and ground black pepper, to taste
- dash ground nutmeg
- 1 1/2 cups pumpkin puree
- 1 cup vegetable broth
- 1 1/2 tablespoons miso paste
- 1/4 cup nutritional yeast flakes
Pasta
- 1 cup mushrooms, chopped
- 1/2 cup peas
- A handful of cherry tomatoes, quartered
- 1 cup noodles
DIRECTIONS
- Fry onion and garlic until golden brown.
- Mix in the sliced mushrooms.
- Mix in the peas.
- Mix in the sage, rosemary and thyme.
- Mix in the lite coconut milk.
- Mix in the pumpkin, salt, ground black pepper, and nutmeg.
- Mix in the vegetable broth, miso paste, and nutritional yeast flakes.
- Serve over pasta with veggies.
