Creamy Pumpkin Spaghetti

INGREDIENTS

Pumpkin Sauce

  • 1 yellow onion, diced
  • 2 tablespoons minced garlic
  • 5 sage leaves, finely diced
  • 2 sprigs rosemary, finely chopped
  • 1 tablespoon thyme
  • 1/4 cup lite coconut milk
  • salt and ground black pepper, to taste
  • dash ground nutmeg
  • 1 1/2 cups pumpkin puree
  • 1 cup vegetable broth
  • 1 1/2 tablespoons miso paste
  • 1/4 cup nutritional yeast flakes

Pasta

  • 1 cup mushrooms, chopped
  • 1/2 cup peas
  • A handful of cherry tomatoes, quartered
  • 1 cup noodles


DIRECTIONS

  1. Fry onion and garlic until golden brown.
  2. Mix in the sliced mushrooms. 
  3. Mix in the peas.
  4. Mix in the sage, rosemary and thyme.
  5. Mix in the lite coconut milk.
  6. Mix in the pumpkin, salt, ground black pepper, and nutmeg.
  7. Mix in the vegetable broth, miso paste, and nutritional yeast flakes.
  8. Serve over pasta with veggies.
