Creole Tofu and Vegetables

INGREDIENTS
- 1 block super firm tofu, diced into 1 inch cubes
- 1 medium onion, diced
- 1 medium bell pepper, diced
- 2 celery stalks, diced
- 2 cups okra, sliced
- 1- 2 cups crushed tomatoes
- creole seasoning, to taste
- 1/2 lemon
DIRECTIONS
- Fry the veggies and garlic over medium heat for about 10 minutes.
- Mix in the tofu.
- Mix in 1 cup crushed tomatoes for a thick consistency or 2 cups for a creamy consistency
- Mix in the creole seasoning
- Cook over medium low heat, stirring often, for about 10 minutes.
- Optionally, garnish with freshly squeezed lemon.
