INGREDIENTS
- 1 red bell pepper, diced
- 2 red beets, peeled and diced
- 2 cups diced red tomato or 15 oz. can diced tomatoes
- 1/2 cup dry or 1 cup softened red beans or kidney beans (drained)
- 1 onion, diced
- 1/2 cup green onions, chopped
- 1 cup red low sodium tomato sauce
- 1 teaspoon minced garlic
- 1 tablespoon dried herbs (basil, oregano, parsley, thyme, et cetera)
- 2 bay leaves
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ground black pepper, to taste
DIRECTIONS
This doesn't really need directions, does it? Fry the veggies, mix in the tomato sauce and spices. Boom, done.
Garnish with green onion.
