Sun Dried Tomato Penne Pasta

INGREDIENTS

  • 1 1/2 cups penne pasta
  • 4 cups mushrooms, sliced
  • 1/4 cup pine nuts
  • 2 cups broccoli, chopped
  • 1 tablespoon minced garlic
  • 7 oz (about 1 cup) sun dried tomatoes, diced
  • 2 cups fresh spinach, chopped
  • 1 bunch green onions
  • ground black pepper
  • onion powder
  • paprika
  • Whatever herbs sound good, such as basil, oregano, parsely, rosemary, thyme


DIRECTIONS

  1. Bring a pot of water to a rolling boil, lower heat.
  2. Add penne pasta, cover, and let simmer for about 5 minutes.
  3. Meanwhile, fry the veggies and garlic over medium heat. You don't want to annihilate the veggies. You just want them to be cooked yet still fairly firm.
  4. Season the veggies with the spices while they are frying.
  5. Mix in the penne pasta, pine nuts and spinach.
