Sun Dried Tomato Penne Pasta

INGREDIENTS
- 1 1/2 cups penne pasta
- 4 cups mushrooms, sliced
- 1/4 cup pine nuts
- 2 cups broccoli, chopped
- 1 tablespoon minced garlic
- 7 oz (about 1 cup) sun dried tomatoes, diced
- 2 cups fresh spinach, chopped
- 1 bunch green onions
- ground black pepper
- onion powder
- paprika
- Whatever herbs sound good, such as basil, oregano, parsely, rosemary, thyme
DIRECTIONS
- Bring a pot of water to a rolling boil, lower heat.
- Add penne pasta, cover, and let simmer for about 5 minutes.
- Meanwhile, fry the veggies and garlic over medium heat. You don't want to annihilate the veggies. You just want them to be cooked yet still fairly firm.
- Season the veggies with the spices while they are frying.
- Mix in the penne pasta, pine nuts and spinach.
