BBQ Brussel Sprouts

INGREDIENTS

  • 20 brussel sprouts
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • ground black pepper, to taste
  • 1 lime (fresh, not bottled)
  • Cilantro (fresh, not dried)
  • Bell pepper, sliced into spears
  • Onion, sliced into spears
  • Mushrooms, sliced
  • 6 tablespoons BBQ sauce


DIRECTIONS

Cut the larger brussel sprouts in half and boil them in water for about 5 minutes, just to soften them up a bit.

Fried on the Stovetop

  1. Fry the onion, bell pepper and garlic for about 5 minutes.
  2. Mix in the brussel sprouts and veggies.
  3. Mix in the seasonings.
  4. Mix in the BBQ sauce.
  5. When serving, coat with lime and garnish with cilantro.

Baked

  1. Preheat oven to 425 degrees.
  2. Spray glass baking pan with nonstick spray, and place everything except for the BBQ sauce, lime and fresh cilantro in the pan.
  3. Bake for 20 minutes. Do not cover baking pan, as we want them to char just a bit.
  4. Stir, coat with BBQ sauce, and bake for another 10 minutes.
  5. Stir again, and bake for 10 more minutes.
  6. When serving, coat with lime and garnish with cilantro.
