Pineapple Curry

INGREDIENTS
- Baby Red Potatoes
- Carrots, chopped
- Pineapple Tidbits
- Baby Carrots
- Bamboo Shoots
- Coconut Water
- Curry Paste
DIRECTIONS
- Steam the baby red potatoes and carrots for about 30 minutes, until nice and soft
- Combine all of the ingredients in a sauce pan and cook over medium heat for about 10 minutes
I really like this with A Taste of Thai Peanut Satay Sauce.
