Hearty Vegan Stew

INGREDIENTS
- 1 red onion
- 4 celery stalks
- 4 carrots
- 2 medium potaotes
- 2 bell peppers
- 2 cups cut green beans
- 4 cups water
- 1/2 cup ketchup
- 1 tablespoon minced garlic
- 1 tablespoon onion powder
- Some herbs, such as parsley, oregano, basil, thyme, et cetera. Fresh herbs are preferred over dried, if possible.
- Salt and ground black pepper, to taste
- About 1/2 cup flour
DIRECTIONS
Stovetop
- In a large pot, mix together the water, garlic and ketchup.
- Mix in the veggies and spices and cook on medium low for about 30 - 45 minutes.
- Mix in the flour to thicken it up a bit.
Slow Cooker
Combine all of the ingredients in a slow cooker and cook on low half the day. This is fine if left covered the whole time. However, it is perfectly OK to stir occasionally.
