Loaded Apple Cinnamon Oatmeal

INGREDIENTS
- 1/2 cup oatmeal
- 1 1/2 teaspoons seeds (e.g. chia seeds, ground flax seeds, hemp seeds)
- 1 cup of your favorite plant based milk (e.g. almond milk, soy milk, rice milk) but avoid coconut milk
- 1 date
- 1 teaspoon ground cinnamon
- 2 tablespoons apple butter or apple sauce
- 1 tablespoon natural maple syrup
- Berries (e.g. strawberries, blueberries, blackberries, raspberries)
- 3 tablespoons nuts (e.g. pecans, walnuts, sliced almonds, et cetera)
Optional ingredients (not included in calories calculation above)
- 10 raisins (use less, or omit if you are trying to lose some weight)
- 1/4 cup Post Grape Nuts (because it's whole grains)
DIRECTIONS
- In a sauce pan, combine oatmeal, chia seeds, flax seeds, hemp seeds and pitted date.
- Add almond milk and stir so that the oatmeal is fully coated and the pitted date is submerged, to release the sweetness from the pitted date.
- Cook over medium heat, stirring often.
- Just before the milk is fully absorbed, season with ground cinnamon.
- Once the milk is fully absorbed, remove the pan from the heat.
- Stir in berries, maple syrup, and apple sauce or apple butter.
- Garnish with sliced almonds and granola.
