Peanut Butter Tofu

INGREDIENTS
- 1 block extra firm tofu, diced into 1 inch cubes
- 2 tablespoons peanut butter
- 3 tablespoons soy sauce
- 1 tablespoon chili garlic sauce
- 1 lime or 1 tablespoon apple cider vinegar
- 2 tablespoons maple syrup
- 2 teaspoons cornstarch
DIRECTIONS
- Combine the sauce ingredients (don't include the cornstarch)
- Dice the tofu into 1 inch squares and marinade in the sauce ingredients for at least 1 hour but preferably overnight
- Bake the tofu in an air fryer or conventional oven at 400 degrees for 10 minutes.
- Mix up the tofu and bake for another 10 minutes.
- Mix up the tofu, coat with cornstarch (this helps to make it crispy) and bake for another 10 minutes.
