Peanut Butter Tofu

INGREDIENTS

  • 1 block extra firm tofu, diced into 1 inch cubes
  • 2 tablespoons peanut butter
  • 3 tablespoons soy sauce
  • 1 tablespoon chili garlic sauce
  • 1 lime or 1 tablespoon apple cider vinegar 
  • 2 tablespoons maple syrup
  • 2 teaspoons cornstarch 


DIRECTIONS

  1. Combine the sauce ingredients (don't include the cornstarch)
  2. Dice the tofu into 1 inch squares and marinade in the sauce ingredients for at least 1 hour but preferably overnight
  3. Bake the tofu in an air fryer or conventional oven at 400 degrees for 10 minutes.
  4. Mix up the tofu and bake for another 10 minutes.
  5. Mix up the tofu, coat with cornstarch (this helps to make it crispy) and bake for another 10 minutes.
