Buddha Bowl

INGREDIENTS
- 1 cup uncooked quinoa
- 2/3 cups dry or 1 1/2 cup softened garbanzo beans
- 1 large red bell pepper, sliced into long spears
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground tumeric
- 1/2 teaspoon oregano, fresh is the best but dried is okay
- Sea salt, to taste
- 1 pack super firm tofu
- Mix greens (e.g. arugula, romain lettuce, spinach, et cetera)
- 1 medium avocado, sliced
- Sesame seeds, as a garnish
- Red Pepper Sauce
DIRECTIONS
Before preparing this meal:
- If using dry beans, soften the beans.
- Prepare the quinoa so that the quinoa is ready when preparing this meal.
- Preheat oven to 425 degrees.
- In a bowl, combine garbanzo beans and spices until the garbanzo beans are coated.
- Bake for 15 - 20 minutes.
- Meanwhile, prepare Red Pepper Sauce Recipe and Air Fryer Tofu
- In a large bowl, layer greens and quinoa.
- Layer tofu.
- Layer garbanzo beans.
- Layer the sliced red pepper.
- Garnish with avocado and sesame seeds.
- Drizzle with Red Pepper Sauce.
