INGREDIENTS

  • 1 cup uncooked quinoa
  • 2/3 cups dry or 1 1/2 cup softened garbanzo beans
  • 1 large red bell pepper, sliced into long spears
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground tumeric
  • 1/2 teaspoon oregano, fresh is the best but dried is okay
  • Sea salt, to taste
  • 1 pack super firm tofu
  • Mix greens (e.g. arugula, romain lettuce, spinach, et cetera)
  • 1 medium avocado, sliced
  • Sesame seeds, as a garnish
  • Red Pepper Sauce


DIRECTIONS

Before preparing this meal:

  • If using dry beans, soften the beans.
  • Prepare the quinoa so that the quinoa is ready when preparing this meal.
  1. Preheat oven to 425 degrees.
  2. In a bowl, combine garbanzo beans and spices until the garbanzo beans are coated.
  3. Bake for 15 - 20 minutes.
  4. Meanwhile, prepare Red Pepper Sauce Recipe and Air Fryer Tofu
  5. In a large bowl, layer greens and quinoa.
  6. Layer tofu.
  7. Layer garbanzo beans.
  8. Layer the sliced red pepper.
  9. Garnish with avocado and sesame seeds.
  10. Drizzle with Red Pepper Sauce.
