Seitan Loaf

INGREDIENTS
- 1 or 2 cups vital wheat gluten
- 1 tablespoon baking powder (if you want a light and fluffy loaf)
- Spices:
- Nutrional yeast flakes
- Onion powder
- herbs:
- Whatever you have (basil, oregano, parsley, rosemary, sage, thyme, et cetera)
- Seeds:
- chia seeds
- hemp seeds
- ground flax seeds
- 3 tablespoons coconut aminos (or soy sauce or Braggs liquid aminos)
DIRECTIONS
- Preheat oven to 350 degrees.
- In a bowl, combine the dry ingredients. If you want a light and fluffy loaf, use 1 cup vital wheat gluten and 1 tablespoon baking powder. If you want a thick and chewy loaf, use 2 cups vital wheat gluten and no baking powder.
- Mix in 1 and 1/2 cup of water and the soy sauce or aminos.
- Kneed until it looks like an internal organ!
- Drop the mixture into the baking pan.
- Add 1 cup of water to the baking pan for a thick/dry consistency or 2 cups for a moist consistency.
- Bake for 1 hour, 30 minutes.
