Seitan Loaf

INGREDIENTS

  • 1 or 2 cups vital wheat gluten
  • 1 tablespoon baking powder (if you want a light and fluffy loaf)
  • Spices:
    • Nutrional yeast flakes
    • Onion powder
  • herbs:
    • Whatever you have (basil, oregano, parsley, rosemary, sage, thyme, et cetera)
  • Seeds:
    • chia seeds
    • hemp seeds
    • ground flax seeds
  • 3 tablespoons coconut aminos (or soy sauce or Braggs liquid aminos)


DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. In a bowl, combine the dry ingredients. If you want a light and fluffy loaf, use 1 cup vital wheat gluten and 1 tablespoon baking powder. If you want a thick and chewy loaf, use 2 cups vital wheat gluten and no baking powder.
  3. Mix in 1 and 1/2 cup of water and the soy sauce or aminos.
  4. Kneed until it looks like an internal organ!
  5. Drop the mixture into the baking pan.
  6. Add 1 cup of water to the baking pan for a thick/dry consistency or 2 cups for a moist consistency. 
  7. Bake for 1 hour, 30 minutes.
