INGREDIENTS
- Tofu Breakfast Scramble
- Tortilla Shells (we like Ole Xtreme Wellness Whole Wheat Tortilla Wraps, they are fairly low in sodium)
DIRECTIONS
Drop tofu scramble in a tortilla shell, fold, wrap in plastic wrap, and store in refrigerator, as this helps them to bond.
When ready to serve, in a pinch, you can warm them up in a microwave. However, they are best when baked in an oven at 425 degrees for about 10 minutes or so, as this makes them the perfect shade of golden brown.
Serve with pico del gallo or salsa or guacamole or avocado buffalo sauce.
