INGREDIENTS

  • 2 medium white potatoes
  • 1 extra large onion, diced
  • 2 medium tomatoes or 15 oz. can diced tomatoes
  • 24 oz. fresh spinach
  • About 1/2 teaspoon of the following spices, to taste
    • chili powder
    • cinnamon
    • cumin seeds
    • garam masala
    • minced garlic
    • minced ginger
    • red pepper flakes 
    • tumeric


DIRECTIONS

  1. In a frying pan, over medium low heat, fry onion, ginger, garlic, and cumin seeds for about 5 minutes.
  2. Set half of the fried onion aside.
  3. Mix in the tomato and half of the spices.
  4. Mix in the spinach, cooking the spinach down so that it wilts.
  5. Mix in the remaining spices.
  6. Process the mixture in a blender until smooth.
  7. In the frying pan, combine the blender mixutre with the onion you had set aside.
  8. Mix in tofu and cook over medium low heat for a few minutes.
  9. Taste test. Add spice if it's a bit too bland.

Traditionally, this would be served with basmati rice and naan bread.
