INGREDIENTS
- 2 medium white potatoes
- 1 extra large onion, diced
- 2 medium tomatoes or 15 oz. can diced tomatoes
- 24 oz. fresh spinach
- About 1/2 teaspoon of the following spices, to taste
- chili powder
- cinnamon
- cumin seeds
- garam masala
- minced garlic
- minced ginger
- red pepper flakes
- tumeric
DIRECTIONS
- In a frying pan, over medium low heat, fry onion, ginger, garlic, and cumin seeds for about 5 minutes.
- Set half of the fried onion aside.
- Mix in the tomato and half of the spices.
- Mix in the spinach, cooking the spinach down so that it wilts.
- Mix in the remaining spices.
- Process the mixture in a blender until smooth.
- In the frying pan, combine the blender mixutre with the onion you had set aside.
- Mix in tofu and cook over medium low heat for a few minutes.
- Taste test. Add spice if it's a bit too bland.
Traditionally, this would be served with basmati rice and naan bread.
