TVP Loaf

INGREDIENTS

  • 1 small onion, diced
  • 1 small carrot, diced
  • 1 celery stalk, diced
  • 2 cups texturized vegetable protein (TVP)
  • 1/4 cup whole wheat Panko breadcrumbs
  • 1/2 cup oatmeal
  • 1 tablespoon nutritional yeast flakes
  • 1/3 cup raisins
  • 1/2 cup chopped pecans
  • 1/2 cup low sodium tomato sauce
  • 3/4 cup of your favorite plant based milk (e.g. almond milk, soy milk, rice milk) but avoid coconut milk
  • 1/4 cup low sodium soy sauce
  • 1 teaspoon ground black pepper
  • Some sort of herb (e.g. basil, oregano, parsley, thyme)


DIRECTIONS

  1. Preheat oven to 400 degrees.
  2. Meanwhile, in a large bowl, combine the TVP, oatmeal, Panko breadcrumbs, veggies, raisins and spices.
  3. In another bowl, combine the tomato sauce, plant based milk, soy sauce,  and 1/2 cup of water.
  4. Combined the wet and dry ingredients.
  5. Coat a baking pan with nonstick spray and drop in the mixture.
  6. Bake for 45 minutes.
  7. Slice into "slabs", transfer  to a nonstick baking sheet,  and then bake for 10 minutes.
  8. Flip each slab and bake for another 10 minutes.
  9. Remove from oven immediately.
  10. Serve with ketchup, BBQ sauce, or brown gravy.
